OUR COFFEE- Ethiopia

Let’s break down our coffee from Northern Africa. Ethiopia is considered by everyone in the coffee biz as the birthplace of coffee, where coffee has been sold and consumed for thousands of years. Since the crop is a mainstay in the country, the varieties of growing climates, plants, soils, flavors, notes, and methods are almost countless. Each region boasts a wide variety of amazing coffee with seemingly every flavor imaginable.

Zooming in a little further, our Ethiopian coffee comes from the Guji Zone, a region famous for its coffee production of it’s own. Nestled into the southwest corner of the country and sitting at 1800m above sea level, the zone provides the perfect environment to make fantastic coffee.

Sibu Coffee opened as a trading company about 20 years ago in the region, and by doing so, opened up the doorway for local farmers to sell their coffee to the world, straight from the beverage’s birthplace. Sibu currently owns two separate washing stations, located in and around the towns of Dame Dabaye and Guracho. To go along with their coffee washing station, Subi has also built and opened an accompanying school, library, public toilet, roads, and expanded clean water access to boot.

Subi exclusively offers grade 1 and 2 level coffee out of the Dame Dabaye washing station, both of which are considered specialty, organic, coffee. They are given these grades due to the immaculate tasting notes, environmentally friendly soil on which they were farmed, and the delicate harvesting, washing, and drying techniques that are used by the farmers.

When we came across the Grade 2 organic coffee from the Guji region, we knew we had to have it.

Simply put, this coffee goes hard. From the birthplace of the drink itself. The Guji Dame Dabaye G2 offers a really nice balance to what comes to us from Guatemala. This coffees known for its fruity and citrus-forward notes including marmalade, guava, and pineapple.

We are using this Ethiopian coffee across our blends to balance out the rich chocolate flavors with a touch of fruit and softness. Organic coffee, subtle fruity taste, all made by farmers who know how to do it best. The perfect source for The Bitter Truth.
